Nordic Ware is the most affordable option at just $18 for the half sheet size. This pure aluminum pan is made in the USA with standard dimensions, one-inch walls, and approximately 1mm thickness. It weighs just 1.6 pounds, making it easy to handle with one hand.

In roasting tests, potatoes stuck slightly and required tongs to move, causing some pieces to break apart. Browning was mostly even, though larger edge pieces were less brown than smaller center pieces. Cleaning took one minute and 13 seconds, which was better than the group average. Cookies baked evenly with no hot or cold spots, though they were slightly undercooked. Most importantly, Nordic Ware showed zero warping during the high-heat test, which is impressive at this price point.

USA Pan Half Sheet: Best Non-Stick Performance

USA Pan costs $25 and is made in the USA from aluminized steel, which is marketed as stronger and more warp-resistant than pure aluminum. The pan features a silicone non-stick coating and a grooved surface designed to increase airflow and prevent sticking. Walls are 1.2 inches tall, slightly higher than Nordic Ware, which helps contain food when shaking or tossing. The pan weighs 1.2 pounds.

In roasting tests, potatoes browned evenly and moved easily without breaking or sticking. The groove pattern was visible on the potato bottoms. Cleaning was the easiest of all pans tested, taking only one minute and four seconds with minimal scrubbing. Cookies turned out better than any other pan, cooking evenly with perfect doneness and releasing easily without a spatula.

However, USA Pan performed poorly in the warping test. It began warping while still in the oven, and one corner buckled dramatically when removed. Although it flattened somewhat as it cooled, it never returned to completely flat.

Made In Half Sheet Pan

Made In costs slightly more than Nordic Ware but uses the same pure aluminum construction and design. It has identical dimensions, one-inch walls, and weighs exactly 1.6 pounds. The main specification difference is that it is oven-safe up to 500°F, compared to Nordic Ware’s 450°F limit.

In roasting tests, potatoes showed more consistent and deeper browning than Nordic Ware, but sticking was worse. Cleaning took longer than USA Pan and Nordic Ware but not by much. Cookies baked similarly to Nordic Ware, evenly but slightly undercooked.

In the warping test, one corner lifted just enough to tap against the countertop. This was not as dramatic as USA Pan’s warping but more noticeable than Nordic Ware’s perfect flatness.

Vollrath Wear-Ever: Commercial-Grade Option

Vollrath is best known for supplying restaurants and professional kitchens. Their Wear-Ever half sheet pan costs around $28 and is built essentially the same as Nordic Ware and Made In, with identical dimensions, thickness, and weight. Performance in roasting, cleaning, and baking tests was nearly identical to those two pans.

In the warping test, Vollrath had the same issue as Made In, with one corner lifting just enough to tap against the countertop. One notable detail was inconsistency in the rolled rim, with larger gaps in some places than others. This had no real impact on performance but is worth noting.

Since Vollrath and Made In are more expensive than Nordic Ware with no notable performance advantages, there is no compelling reason to choose them over the least expensive option.

Caraway Large Sheet Pan: Premium Non-Stick

Caraway costs $55 and is made in China from aluminized steel with a ceramic non-stick coating and stainless steel handles on the sides. It comes in several exterior colors with a gray interior. This pan is noticeably larger than the others, about an inch longer and half an inch wider, but has the lowest walls at just under an inch. It weighs 3.7 pounds, more than twice as heavy as the aluminum pans.

In roasting tests, potatoes browned evenly with zero sticking and moved easily without breaking. Cleaning was as easy as USA Pan. Cookies cooked evenly but overcooked around the edges with a dark ring and slightly overdone bottoms. In the warping test, Caraway stayed completely flat, with sturdy steel handles helping stabilize the entire pan.

One significant drawback is that the handles stay hot much longer than the pan body. After five minutes, the main pan was around 90°F while handles were still over 120°F, creating a burn risk.

Hestan OvenBond: Maximum Durability

Hestan is by far the most expensive option at $130, more than seven times the price of Nordic Ware. It is the only stainless steel pan tested, made in China with tri-ply construction: stainless steel top and bottom layers with an aluminum core. This construction gives it substantial weight at 4.6 pounds, nearly three times heavier than aluminum pans. At 18.5 inches long and 13.8 inches wide, it is the largest pan tested. Built-in rivetless stainless steel handles extend 1.25 inches from each side. The pan is the thickest at 2.1mm and can handle the highest heat at up to 600°F.

In roasting tests, browning was fairly consistent across all pieces, but sticking was significant. Cleaning was the hardest of all pans, and rainbow-colored oxidation stains remained even after cleaning, though these can be removed with vinegar.

Cookies browned evenly but were noticeably undercooked, likely due to the thickness and fully-clad stainless steel construction heating slower than aluminum. The one area where Hestan truly excelled was the warping test, showing absolutely no signs of warping or buckling.

Buying Advice

The best sheet pan depends on what matters most to you.

For the best value, Nordic Ware delivers excellent performance at the lowest price. It heats evenly, resists warping, and is lightweight and affordable. The main drawbacks are that food can stick, the surface is prone to scratches, and under pressure it can warp and dent.

For the best non-stick performance, USA Pan is the clear winner between the two non-stick options tested. It performed better in baking tests, is almost a pound lighter than Caraway, and costs less than half the price. The main concern is warping, but this can be avoided with proper use.

For maximum durability and longevity, Hestan is the most durable option. The thick stainless steel construction resists warping, scratching, and denting, and it can handle higher heat. The trade-offs are significant weight, slower heating, and a much higher price.
